  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups vegetable broth

Spices

  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper

Finishing Touches

  • 2 cups fresh spinach or kale For added nutrition and color
  • 1 tablespoon olive oil For sautéing

Preparation

  • Heat the olive oil in a large pot over medium heat until shimmering.
  • Add the diced onions, stirring until translucent and fragrant.
  • Incorporate the minced garlic and cook until aromatic, about one minute.
  • Add the diced carrots and celery, stirring until soft.
  • Sprinkle in the cumin and paprika, toasting until fragrant.
  • Pour in the dry lentils and stir to coat with the aromatic mixture.

Cooking

  • Pour in the vegetable broth and bring to a gentle boil.
  • Reduce the heat and cover, letting the mixture simmer for 30-40 minutes until the lentils are tender.
  • In the last moments of cooking, stir in the fresh spinach or kale, allowing them to wilt.
  • Taste and adjust the seasoning with salt and pepper as needed.

Notes

Fresh herbs can enhance flavor when added before serving. This dish can easily be doubled for larger gatherings.
