Ingredients
  

Cheesecake Filling

  • 8 oz cream cheese, softened Ensure cream cheese is at room temperature for optimal mixing.
  • 0.5 cup powdered sugar
  • 0.25 cup fresh lemon juice Using fresh lemon juice enhances the flavor.
  • 1 tbsp lemon zest Adds depth to the flavor.
  • 1 tsp vanilla extract

Graham Cracker Crust

  • 1 cup graham cracker crumbs
  • 0.25 cup unsalted butter, melted Ensure the butter is melted.

Optional Topping

  • to taste whipped cream For serving, optional.

Instructions
 

Prepare Filling

  • In a mixing bowl, add softened cream cheese and let it soften for a moment.
  • Sprinkle in powdered sugar and blend until combined.
  • Pour in fresh lemon juice and lemon zest, mixing until smooth.
  • Add vanilla extract and stir until beautifully combined.

Prepare Crust

  • In a separate bowl, combine graham cracker crumbs with melted butter.
  • Press the graham cracker mixture firmly into the bottom of a lined square baking dish to form the crust.

Assemble and Chill

  • Pour the cheesecake filling over the crust, spreading it evenly.
  • Cover the dish and refrigerate for at least four hours.

Serve

  • Once set, cut into squares and serve with a dollop of whipped cream, if desired.

Notes

To maintain freshness, cover the bites and store in the refrigerator for up to four days. For longer storage, freeze tightly wrapped for up to three months.
