  • 1 pound Ground beef
  • 1 cup Bell peppers, sliced Use any color bell peppers for sweetness.
  • 1 small Onion, thinly sliced
  • 1 cup Provolone cheese, shredded Feel free to substitute with your preferred cheese.
  • 1 tablespoon Olive oil For sautéing the vegetables.
  • Salt and pepper To taste.
  • Low carb wraps or tortillas Choose your preferred brand.

Preparation

  • Heat one tablespoon of olive oil in a skillet over medium heat until shimmering.
  • Add sliced onions and bell peppers; sauté until softened and fragrant, about five minutes.
  • Add ground beef to the skillet; season with salt and pepper and cook until browned and crumbled, about eight minutes.
  • Once cooked, remove the skillet from heat and stir in the shredded provolone cheese until melted and creamy.

Assembly

  • Place a generous portion of the beef and cheese mixture on a low carb wrap, rolling it up tightly from one end to the other.
  • Repeat the process until all the mixture is used, placing each rolled wrap seam-side down on your serving dish.
  • Optionally, you can briefly heat the rolls in a warm oven until slightly crisped to enhance textures.
  • Serve immediately while warm and enjoy.

Notes

For best results, make sure vegetables are sliced evenly. You can experiment with seasonings or different types of cheese for variety.
