Ingredients
  

For the Filling

  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup corn syrup
  • 3 large eggs
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup pecans Preferably toasted
  • 1 cup chocolate chips Optional

For the Crust

  • 1 unbaked pie crust

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine brown sugar, granulated sugar, corn syrup, eggs, melted butter, and vanilla extract. Mix until smooth and glossy.
  • Stir in pecans and chocolate chips, if using.
  • Pour the filling into the unbaked pie crust, distributing pecans evenly.

Baking

  • Bake in the preheated oven for 60 to 70 minutes or until filling is set and top is caramelized.
  • Let the pie cool slightly before serving.

Serving

  • Serve warm, ideally with a scoop of vanilla ice cream.
  • Store any leftovers tightly covered in the refrigerator for 3 to 4 days, or freeze for up to 3 months.

Notes

For enhanced flavor, consider toasting the pecans beforehand. You can substitute eggs with ground flaxseed for a vegan option.
