Ingredients

Main Ingredients

  • 3-4 pounds beef pot roast Choose high-quality beef for best flavor.
  • 2 large onions, sliced Use sweet onions for better caramelization.
  • 1 can condensed French onion soup (10.5 ounces)
  • 1 cup beef broth For deeper flavor, consider low-sodium.
  • 2-3 cloves garlic, minced
  • 2 tablespoons olive oil Heat oil before searing the beef.
  • Salt and pepper, to taste
  • Fresh thyme, for garnish Adds flavor and a pop of color.

Instructions

Preparation

  • Preheat the oven to 325°F (163°C).
  • Heat olive oil in a large Dutch oven over medium-high heat.
  • Season the beef pot roast generously with salt and pepper.
  • Sear the roast in the hot oil for about 5-7 minutes until browned on all sides.
  • Remove the roast from the pot and set aside.
  • Add sliced onions to the pot and sauté until they are tender and caramelized, about 10 minutes.
  • Stir in minced garlic and cook for an additional minute.

Cooking

  • Return the seared roast to the pot, surrounding it with the caramelized onions.
  • Add the condensed French onion soup and beef broth, stirring to combine.
  • Cover the pot and transfer it to the oven, baking for 3-4 hours until the meat is fork-tender.
  • Remove from the oven and let the roast rest before shredding it with a fork.
  • Serve garnished with fresh thyme.

Notes

To enhance flavors, consider using red wine instead of some beef broth or adding a bit of brown sugar while caramelizing the onions. Ensure to let the roast rest after cooking for tender slices.
