Preparation

  • Preheat your oven to 350°F.
  • In a large mixing bowl, combine the ground chicken with breadcrumbs until blended.
  • Add in grated Parmesan cheese, chopped parsley, diced onion, and minced garlic, mixing gently to combine.
  • Season your mixture with salt and black pepper.
  • Crack in an egg to bind the ingredients together.
  • Shape the mixture into a loaf and place it in a greased baking dish.
  • Create a well in the center of the loaf, filling it with shredded mozzarella cheese.
  • Pour marinara sauce over the top.
  • Sprinkle breadcrumbs over the marinara.

Cooking

  • Bake for 45 to 55 minutes, until the meatloaf is cooked through and reaches 165°F internally.
  • Let it rest for several minutes before slicing.

Notes

If the meatloaf is too dry, reduce baking time or add broth. For additional flavor, try adding Italian seasoning.
