Preparation

  • Season the beef chuck with salt and pepper until well-coated.
  • Heat oil in a large pot over medium-high heat until it shimmers.
  • Add the beef in batches, browning each side for about 8-10 minutes.
  • Remove the browned beef and set aside.
  • Stir in diced onion and cook for about five minutes until softened.
  • Add smashed garlic and cook for 1-2 minutes until fragrant.
  • Stir in diced potatoes, sliced carrots, and green beans until mixed.

Cooking

  • Pour in beef broth and stout beer, scraping the bottom of the pot to incorporate browned bits.
  • Add thyme, bay leaf, and Worcestershire sauce.
  • Bring to a boil, then reduce heat to a simmer and cover.
  • Cook for about two hours until beef and vegetables are tender.

Notes

Experiment with seasonings; consider adding chili for a kick. The stew tastes even better after resting for a bit.
