Ingredients
  

For the Chicken

  • 4 pieces boneless chicken breasts, about six ounces each Use fresh, high-quality chicken for best results.
  • 1/3 cup honey Choose high-quality honey for richer flavor.
  • 1/3 cup Dijon mustard Can substitute with yellow mustard if necessary.
  • 2 tablespoons soy sauce Use gluten-free soy sauce for a gluten-free option.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced

For the Rice

  • 1 cup white rice Rinse under cold water until the water runs clear.
  • 2 cups chicken broth Enhances the flavor of the rice.

For Garnish

  • Fresh parsley as needed chopped For garnish.

Marinate the Chicken

  • In a mixing bowl, combine honey, mustard, soy sauce, olive oil, and minced garlic. Stir until well blended, about two minutes.
  • Season the chicken breasts with salt and pepper on both sides. Place them in a resealable bag and pour the marinade over the chicken. Seal and refrigerate for at least thirty minutes.

Cook the Rice

  • While the chicken marinates, rinse one cup of rice under cold water until the water runs clear.
  • In a saucepan, bring two cups of chicken broth to a boil over medium-high heat. Add the rinsed rice, reduce heat to low, cover, and let it simmer for about fifteen minutes or until the rice has absorbed all the liquid.

Bake the Chicken

  • Preheat your oven to 400°F (200°C).
  • Transfer the marinated chicken to a baking dish and pour the remaining marinade over it. Bake uncovered for about twenty-five to thirty minutes or until the chicken is cooked through and a nice glaze forms on top.
  • Occasionally, baste the chicken with the cooking juices to enhance flavor, about every ten minutes.
  • Once the chicken is done, let it rest for five minutes before slicing it.

Serve

  • Fluff the rice with a fork and serve it on individual plates topped with sliced chicken and a drizzle of the pan juices.
  • Garnish with chopped parsley for a pop of color and enjoy your meal.

Notes

The chicken can be marinated overnight for more flavor. Serve with seasonal vegetables for a complete meal.
