Main ingredients

  • 14 ounces chicken or turkey sausage, sliced into half-inch rounds Use your favorite sausage type for added flavor.
  • 2 medium sweet potatoes, peeled and diced into half-inch cubes Alternatively, use butternut squash for a seasonal variation.
  • 2 cups broccoli florets, cut into half-inch pieces Feel free to substitute with seasonal vegetables.
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey Can substitute with maple syrup or agave nectar.
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • to taste salt
  • to taste black pepper
  • 2 tablespoons fresh parsley, finely minced For garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly coat with nonstick spray.
  • In a large bowl, combine the sliced chicken or turkey sausage, diced sweet potatoes, and broccoli florets, arranging them attractively.
  • In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant.
  • Stir in honey, soy sauce, and apple cider vinegar, and simmer until sauce thickens.

Cooking

  • Pour the honey garlic glaze over the sausage and vegetables, tossing to coat evenly.
  • Transfer the baking sheet to the oven and roast for 25-30 minutes, stirring halfway through.
  • Once cooked, remove from the oven and sprinkle with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven or microwave.
