  • 14 ounces chicken or turkey sausage, sliced into half-inch rounds
  • 2 medium sweet potatoes, peeled and diced into half-inch cubes
  • 2 cups broccoli florets, cut into half-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce Use gluten-free soy sauce for a gluten-free option.
  • 1 tablespoon apple cider vinegar
  • salt to taste
  • black pepper to taste
  • 2 tablespoons fresh parsley, finely minced For garnish

Preparation

  • Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper or lightly coat with nonstick spray.
  • Slice the chicken or turkey sausage into half-inch rounds.
  • Peel and dice the sweet potatoes into uniform half-inch cubes.
  • Trim broccoli into small florets.

Glaze Preparation

  • In a small saucepan over medium heat, melt the butter.
  • Add minced garlic and sauté for one minute until fragrant.
  • Stir in honey, soy sauce, apple cider vinegar, salt, and black pepper.
  • Simmer the mixture for 2-3 minutes, stirring occasionally until it thickens slightly.

Cooking

  • Arrange the sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
  • Pour the honey garlic glaze evenly over the ingredients and toss until everything is coated.
  • Place the pan in the oven and roast for 25-30 minutes, stirring once halfway through, until sweet potatoes are fork-tender and sausage is golden.
  • Remove from the oven and sprinkle with freshly minced parsley before serving.

Notes

For additional flavor, consider adding a pinch of red pepper flakes or swapping seasonal vegetables. This recipe can also be easily doubled for meal prep.
