  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce Use your favorite kind
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 cup mixed vegetables Fresh or frozen
  • to garnish chopped green onions or parsley For freshness

Preparation

  • Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat oil in a large skillet over medium heat and sear the chicken for 3 to 4 minutes per side until golden.
  • Remove the chicken and set aside.
  • Add rice to the same pan and toast for 1 to 2 minutes while stirring.
  • Pour in chicken broth, BBQ sauce, and honey; bring to a gentle boil.
  • Nestle the seared chicken into the pan, reduce heat to low, cover, and simmer for 15 minutes.
  • Sprinkle mixed vegetables over the rice, cover again, and cook for 5 more minutes until rice is tender.
  • Remove from heat and let rest for 5 minutes.
  • Fluff the rice with a fork and garnish with green onions or parsley.

Notes

For a bit of heat, add cayenne pepper to the chicken seasoning. Substitute leftover chicken for a quicker prep time. Using instant rice can speed up the cooking without sacrificing too much flavor.
