Ingredients
  

Chicken Preparation

  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Sauce

  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 clove minced garlic optional for additional flavor
  • 1 splash soy sauce optional

Rice and Broth

  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth

Vegetables and Garnish

  • 1 cup mixed vegetables such as peas and carrots
  • Chopped green onions for garnish

Instructions
 

Preparation

  • Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat a skillet over medium heat and add the seasoned chicken; sear for 3-4 minutes on each side until golden brown.
  • Remove the chicken and set aside.
  • In a bowl, mix BBQ sauce, honey, soy sauce if desired, and minced garlic until combined.

Cooking

  • In the same skillet, toast the uncooked rice for 1-2 minutes.
  • Add chicken broth and half of the sauce to the skillet, stirring to combine.
  • Return the chicken to the pan, pour the remaining sauce over, cover, and simmer for 15 minutes.
  • Add mixed vegetables, cover, and cook for an additional 5 minutes.
  • Let the dish rest for 5 minutes before serving.

Notes

Let the chicken marinate in seasonings for at least an hour for enhanced flavor. Store in an airtight container in the fridge for up to three days or freeze for three months.
