For the truffle filling

For rolling and finishing

  • 0.5 cup powdered sugar

Preparation

  • Puree one cup of fresh strawberries into a smooth mixture.
  • Heat one cup of heavy cream gently over medium heat until it begins to simmer.
  • Remove the cream from heat and pour it over eight ounces of chopped white chocolate in a bowl. Let it sit for a minute.
  • Stir the mixture gently until it becomes silky smooth, then mix in the pureed strawberries and half a teaspoon of vanilla extract.
  • Transfer the mixture to the refrigerator and let it chill for about two hours or until firm.

Rolling the truffles

  • Once the mixture is firm, scoop out small portions using a melon baller or a spoon.
  • Roll each portion between your hands to form small balls.
  • Roll the truffles in either crushed graham crackers or cocoa powder.
  • Arrange rolled truffles on a baking sheet lined with parchment paper.
  • Refrigerate until they are set.

Notes

Store in an airtight container in the refrigerator for up to one week. You can freeze them individually wrapped for up to three months. Using high-quality ingredients ensures the best flavor.
