  • 2 cups water Warm but not scalding
  • 2 tablespoons sugar To dissolve in water
  • 1 packet active dry yeast Around 2 1/4 teaspoons
  • 4 cups all-purpose flour For the dough
  • 1 teaspoon kosher salt For seasoning the dough

Boiling Solution

  • 8 cups water For boiling the pretzel bites
  • 1/2 cup baking soda Added to boiling water

Finishing Touch

  • 1 large egg Beaten for brushing
  • coarse salt For sprinkling on top

Preparation of Dough

  • Warm two cups of water until comfortably warm.
  • Dissolve two tablespoons of sugar into the water, then add one packet of active dry yeast.
  • Allow the yeast mixture to foam for five minutes.
  • Whisk together four cups of all-purpose flour and one teaspoon of kosher salt in a large bowl.
  • Gradually pour in the yeast mixture, stirring until a soft dough forms.
  • Knead the dough on a floured surface for five minutes until smooth and elastic.
  • Place the kneaded dough in a greased bowl, cover, and let rise until doubled in size for approximately one hour.

Shaping and Boiling

  • After rising, punch the dough down and divide it into smaller pieces.
  • Roll each piece into ropes and cut into bite-sized portions.
  • Boil eight cups of water with half a cup of baking soda for thirty seconds before adding the pretzel bites.
  • Transfer bites to a parchment-lined baking sheet, brush with beaten egg, and sprinkle with coarse salt.

Baking

  • Bake at four hundred degrees Fahrenheit for twelve to fifteen minutes or until golden brown.

Notes
