For Boiling

  • 1/2 cup baking soda Used in boiling to achieve chewiness.

For Topping

  • 1 egg beaten For egg wash to create a glossy finish.
  • to taste coarse sea salt Sprinkle on top before baking.

Preparation

  • In a large bowl, combine warm water, yeast, and sugar. Let sit for about five minutes until frothy.
  • Gradually add flour and salt to the yeast mixture, mixing until a dough forms.
  • Knead the dough on a floured surface for about five to seven minutes until smooth.
  • Let the dough rise in a greased bowl, covered, for approximately thirty minutes.

Baking

  • Preheat the oven to 450°F.
  • Bring a large pot of water to a rolling boil and stir in baking soda.
  • Divide the dough into small pieces and roll each into bite-sized pretzel shapes.
  • Boil each pretzel bite for about thirty seconds, then remove and place on a greased baking sheet.
  • Brush each pretzel bite with the egg wash and sprinkle with coarse sea salt.
  • Bake for twelve to fifteen minutes or until golden brown.
  • Let cool slightly before serving.

Notes

To achieve the perfect texture, ensure your dough has risen adequately. Experiment with different toppings for variety.
