  • 2 packs Ramen noodles
  • 2 cups Chicken broth Use low-sodium for less salt.
  • 1 cup Shredded cooked chicken
  • 1 cup Mixed vegetables (carrots, bell peppers, spinach) Feel free to use seasonal vegetables.
  • 2 slices Green onions For garnish.
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients.
  • In a large pot, pour in two cups of chicken broth and bring it to a simmer over medium heat.
  • Add the shredded chicken, mixed vegetables, soy sauce, and sesame oil.
  • Let this concoction gently bubble for about five minutes, stirring occasionally until the vegetables are tender.
  • Add the ramen noodles and cook according to package instructions until they are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with sliced green onions.

Notes

If leftovers are available, store in the refrigerator for up to three days. The flavors will deepen overnight. Noodles may soften; it's best to store them separately if possible.
