  • 1 large egg Best at room temperature
  • 1 cup avocado oil Provides a buttery flavor with health benefits
  • 1 tablespoon distilled white vinegar
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons fresh lemon juice
  • 0.5 teaspoon Himalayan Pink salt
  • 2 pinches sweet paprika For warming flavor

Preparation

  • Find a tall container, like a 32-ounce mason jar, for easy blending.
  • Crack one large egg into the container.
  • Add one tablespoon of distilled white vinegar, two teaspoons of apple cider vinegar, and two teaspoons of fresh lemon juice.
  • Sprinkle in half a teaspoon of Himalayan Pink salt and add two pinches of sweet paprika.
  • Pour in one cup of avocado oil on top.

Blending

  • Insert your stick blender and turn it on at a low speed, keeping it at the bottom until the mixture thickens, about 30 seconds.
  • Slowly move the blender upwards to incorporate all ingredients until desired consistency is reached.
  • Taste and adjust seasoning as needed by stirring in more salt or vinegar.

Notes

Homemade mayo lasts about two weeks in the refrigerator. Keep in an airtight container. Freezing is not recommended due to texture changes.
