Main Ingredients

  • 1 pound ground beef Lean beef is preferred.
  • 1 medium onion, chopped
  • 1 can kidney beans, drained and rinsed Red or dark kidney beans can be used.
  • 1 can corn, drained Sweet corn adds flavor.
  • 1 can diced tomatoes with green chilies
  • 2 cups cooked rice Leftover rice works well.
  • 1 teaspoon garlic powder
  • to taste salt and pepper Season to your preference.
  • 1 cup shredded cheese Optional for topping.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef and chopped onion until golden brown.
  • Drain any excess fat.
  • Stir in the kidney beans, corn, and diced tomatoes.
  • Add the cooked rice and garlic powder; season with salt and pepper.

Baking

  • Transfer the mixture to a greased casserole dish and smooth into an even layer.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.

Notes

For extra flavor, you can add diced bell peppers or jalapeños. Leftovers taste even better the next day.
