Ingredients
  

For the Rice Bowl

  • 1 pound chicken breast boneless and skinless
  • 2 sweet potatoes, diced medium-sized
  • 1 cup rice white or brown
  • 1 tablespoon olive oil for roasting sweet potatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the diced sweet potatoes in a bowl with olive oil, salt, pepper, garlic powder, and paprika.
  • Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast them in the oven for 20 to 30 minutes until golden and tender.

Cooking the Rice and Chicken

  • Prepare 1 cup of rice according to package instructions until fluffy.
  • Season chicken breast with salt, pepper, and any preferred spices.
  • Heat a skillet over medium heat and cook the chicken for 6 to 7 minutes per side until fully cooked and golden.
  • Remove the chicken from the pan, let rest, and then slice.

Assembly

  • Start by placing a portion of rice at the bottom of each bowl.
  • Top the rice with roasted sweet potatoes and sliced chicken.
  • Garnish with fresh parsley if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months. Reheat gently on the stove or microwave.
