  • 3 pieces ripe bananas, mashed Ensure they are very ripe with lots of brown spots for maximum sweetness.
  • 0.5 cup unsweetened pineapple, mashed or crushed Fresh crushed pineapple adds depth to the flavor, canned can work in a pinch.
  • 2 cups all-purpose flour Level with a knife to avoid overly dense bread.
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon Optional for a hint of warmth.
  • 0.5 cup brown sugar Adjust to taste preferences.
  • 2 pieces large eggs Can be replaced with flaxseed meal mixed with water for a vegan option.
  • 0.5 cup butter, melted
  • 0.5 cup chopped walnuts or macadamia nuts Optional for added texture.

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  • In a large mixing bowl, mash the ripe bananas until smooth and creamy.
  • Add the crushed pineapple to the banana mixture, mixing gently to combine.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon.
  • Return to the banana mixture and add the brown sugar, eggs, and melted butter, stirring until smooth.
  • Gradually fold the dry ingredients into the wet mixture, stirring until just combined.
  • If using, gently fold in the chopped nuts.
  • Pour the batter into the prepared loaf pan, leveling the top with a spatula.

Cooking

  • Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm with butter, or enjoy with a scoop of coconut ice cream. For extra tropical flair, consider adding shredded coconut or citrus zest.
