  • 1 lb ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 0.5 cup beef broth
  • 1 tbsp olive oil

Spices

  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 0.5 tsp paprika

Preparation

  • Preheat oven to 375°F (190°C).
  • Peel and dice the potatoes into small, even cubes.
  • Chop the onion and mince the garlic.

Cooking

  • In a large skillet, heat olive oil over medium heat, then add the onion and garlic, sautéing until fragrant.
  • Add ground beef, salt, pepper, thyme, and paprika to the skillet, cooking until browned.
  • Pour in beef broth and simmer for a few minutes.
  • In a large mixing bowl, combine potatoes, beef mixture, sour cream, and half of the cheddar cheese.
  • Transfer to a baking dish, top with remaining cheese, and cover with foil.
  • Bake for 30 minutes, then remove foil and bake uncovered for an additional 10-15 minutes until cheese is golden.
  • Let the casserole rest for 10 minutes before serving.

Notes

Substitute ground beef with turkey or chicken for a lighter version. Add cooked vegetables like peas or spinach for added nutrition.
