Ingredients
  

For the Chicken

  • 1 lb chicken breasts Boneless and skinless
  • 2 tbsp olive oil For marinating
  • 2 cloves garlic Crushed
  • 2 tbsp lemon juice Freshly squeezed
  • 1 tsp salt
  • 1 tsp black pepper Freshly cracked

For the Bowls

  • 1 cup cucumber Chopped
  • 1 cup cherry tomatoes Halved
  • 1/2 cup red onion Diced
  • 1 cup chickpeas Rinsed
  • 1/2 cup feta cheese Crumble for topping

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup cucumber Grated
  • 1 clove garlic Minced
  • 1 tbsp dill
  • 1 tbsp lemon juice Additional splash

Instructions
 

Marinating the Chicken

  • Combine chicken breasts, olive oil, crushed garlic, lemon juice, salt, and black pepper in a dish and marinate for at least 30 minutes.

Grilling the Chicken

  • Heat the grill or a pan on medium-high heat and add the marinated chicken, cooking until golden brown and fully cooked, about 6-8 minutes per side.
  • Slice the cooked chicken into bite-sized pieces.

Preparing the Vegetables

  • In a separate bowl, combine chopped cucumber, cherry tomatoes, diced red onion, and rinsed chickpeas, mixing well.

Assembling the Bowls

  • Create a bed of the vegetable mixture in a bowl and top with sliced chicken.
  • Crumble feta cheese over the top and drizzle generously with tzatziki sauce.

Notes

For a twist, substitute chicken with grilled shrimp or salmon, or make a vegetarian version using marinated grilled eggplant or zucchini.
