Ingredients
  

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 0.5 cup grated cucumber, drained
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • to taste salt and pepper For seasoning

For the Bowl

  • 1 lb grilled chicken breast, sliced
  • 2 cups cooked quinoa or brown rice Fluffed gently before serving
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium red onion, thinly sliced
  • 1 medium bell pepper, diced
  • 1 cup feta cheese, crumbled
  • 0.25 cup sliced olives

Instructions
 

Prepare the Tzatziki Sauce

  • In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and season with salt and pepper. Stir until smooth and creamy.

Assemble the Bowls

  • Layer cooked quinoa or brown rice in serving bowls.
  • Top with grilled chicken, cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, and olives.
  • Drizzle homemade tzatziki sauce generously over the top.
  • Serve immediately or store in airtight containers in the refrigerator for meal prep.

Notes

For a vegetarian option, replace chicken with grilled eggplant or chickpeas. You can substitute quinoa with farro for a unique taste.
