  • 0.5 teaspoon dried basil or oregano Your choice of herb
  • 0.5 cup heavy cream or milk Optional, for a creamy version

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent and fragrant, about 5 minutes.
  • Stir in minced garlic and cook for an additional minute.
  • Add crushed tomatoes, vegetable broth, sugar, salt, black pepper, and dried basil or oregano.
  • Bring the soup to a boil and then reduce heat to simmer for 20-25 minutes.
  • Use an immersion blender to puree the soup until smooth.
  • If desired, stir in heavy cream or milk and simmer for a few more minutes.
  • Adjust seasoning as needed and serve hot, garnished with fresh basil and a drizzle of olive oil.

Notes

For a thicker soup, let it simmer longer. If too acidic, add a pinch of sugar or cream. The soup is versatile; pair with grilled cheese or crusty bread.
