Ingredients
  

For the Pancakes

  • 2 cups All-purpose flour
  • 3 tablespoons Sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 1.5 cups Buttermilk
  • 0.5 cup Melted butter
  • 2 large Eggs

For the Quiche

  • 1 pie Pie crust Use a pre-made crust for convenience.
  • 12 large Eggs
  • 1 cup Milk
  • 2 cups Chopped vegetables Use bell peppers, spinach, and onions.
  • 1 cup Shredded cheese Your choice of cheese.

For the Avocado Toast

  • 2 ripe Avocados
  • 1 tablespoon Lemon juice Freshly squeezed is best.
  • 6 slices Bread Toasted.
  • Red pepper flakes To taste.
  • Sea salt To taste.

For the Fruit Platter

  • 2 cups Mixed fresh fruit Includes strawberries, blueberries, and honeydew.

Preparation

  • Mix all-purpose flour, sugar, baking powder, and salt in a large bowl.
  • In another container, mix buttermilk, melted butter, and eggs. Blend well.
  • Combine wet and dry ingredients, stirring until just mixed.
  • Let the pancake batter rest.
  • For the quiche, crack eggs into a bowl, add milk, and whisk until fluffy.
  • Sauté vegetables until fragrant, then fold into egg mixture.
  • Pour the mixture into a pie crust.
  • For the avocado toast, mash avocados with lemon juice and salt.
  • Toast the bread and spread the avocado mixture on top.

Cooking

  • Cook pancakes on a griddle until golden brown on each side.
  • Bake the quiche as per crust instructions until set.

Notes

For fluffiest pancakes, rest batter for ten minutes. Customize avocado toast with toppings like radishes or cherry tomatoes. Use fresh herbs for added flavor.
