  • 2 large Yellow onions, sliced thinly

  • 0.5 teaspoon Salt
  • 3 cloves Garlic, minced
  • 1.5 cups Orzo pasta
  • 2 cups Cooked shredded chicken Can use rotisserie chicken
  • 0.5 teaspoon Dried thyme
  • 0.25 teaspoon Black pepper
  • 2 cups Low-sodium chicken broth
  • 1 cup Heavy cream or half and half For a lighter version
  • 1.5 cups Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 0.5 teaspoon Worcestershire sauce or balsamic glaze Optional for deeper flavor

Instructions
 

Preparation

  • Melt the butter and olive oil in a large oven-safe skillet over medium heat.
  • Add the sliced onions, sugar, and salt. Cook for 20-25 minutes, stirring occasionally, until caramelized.
  • Stir in the minced garlic about 1-2 minutes before the onions finish cooking.
  • Add the orzo pasta and toast for 2 minutes.
  • Stir in the shredded chicken, thyme, black pepper, and optional Worcestershire sauce or balsamic glaze.
  • Pour in the chicken broth and heavy cream, then simmer on low for 8-10 minutes covered.
  • Stir in the mozzarella and Parmesan cheese until melted and creamy.

Baking

  • Preheat the oven to 375°F (190°C).
  • Sprinkle the remaining mozzarella cheese on top and bake uncovered for 10-15 minutes until golden and bubbly.
  • Let it rest for 5-10 minutes before serving.

Notes

For a vegetarian option, substitute chicken with sautéed mushrooms. Use fresh herbs for a more vibrant flavor.
