Cookie Dough

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • a pinch salt to enhance flavors
  • 1 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 0.33 cup brown sugar for extra depth of flavor
  • 2 teaspoons pure vanilla extract
  • 1 large egg for binding

Preparation

  • In a large bowl, combine the flour, baking powder, and salt until well mixed.
  • In a separate bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  • Add the vanilla extract and the egg, beating until fully incorporated.
  • Gradually mix the flour mixture into the wet ingredients, stirring until just combined.
  • Divide the dough in half, wrap each half in plastic wrap, and chill in the refrigerator for at least one hour.

Baking

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll out one half of the dough on a floured surface to about 1/4 inch thick.
  • Use football-shaped cookie cutters to punch out cookies and place them on the baking sheet.
  • Bake for about 12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container at room temperature for up to one week. For longer storage, freeze the cookies in plastic wrap and a resealable bag for up to three months.
