Ingredients
  

For the Noodles

  • 2 servings dry instant ramen noodles Standard instant ramen noodles.
  • 1 cup water or vegetable broth Choose broth for extra flavor.

For the Sauce

  • 5-7 tablespoons soy sauce Adjust for taste.
  • 2-3 tablespoons corn starch Thickening agent for sauce.
  • 2 tablespoons rice vinegar Adds tangy flavor.

Optional Add-ins

  • 1 cup sliced vegetables or tofu Choose seasonal or your favorite vegetables.
  • scallions and sesame seeds For garnish.

Preparation

  • In a small bowl, whisk together soy sauce, corn starch, and rice vinegar until smooth.
  • Bring water or vegetable broth to a boil in a pot.
  • Add dry instant ramen noodles and cook for 2-3 minutes less than package instructions.
  • Drain noodles and rinse under cool water to stop cooking.

Cooking

  • In a medium-high heat pan, sauté choice of sliced vegetables or tofu until golden and aromatic.
  • Pour in the prepared sauce and let bubble and thicken.
  • Stir in drained noodles, ensuring they are coated in sauce.
  • Cook for an additional 3 minutes to meld flavors.

Serving

  • Serve hot, garnished with scallions and sesame seeds.

Notes

For added flavor, consider adding a dash of sriracha or peanut butter. Leftovers can be stored in an airtight container for about 3 days.
