Ingredients
  

For the Broth

  • 1 tablespoon oil For frying the vegetables
  • 1 medium onion, sliced
  • 1 tablespoon fresh grated ginger
  • 4 cloves garlic, pressed or finely minced
  • 1 tablespoon chili garlic sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 0.5 cup low sodium soy sauce
  • 0.25 cup rice vinegar
  • 4 ounces shiitake mushrooms, sliced Stems removed
  • 0.5 to 0.75 pounds baby bok choy, sliced into quarters
  • 1 pound boneless skinless chicken thighs
  • 4 cups low sodium chicken broth
  • 1 cup water

For the Noodles and Eggs

  • 1 to 2 packages fresh yakisoba noodles Cook according to package instructions
  • 0.25 cup low sodium soy sauce For marinating eggs
  • 0.25 cup rice vinegar For marinating eggs
  • 0.75 cup water For marinating eggs

For Serving

  • to taste sliced green onion For garnish
  • to taste fresh cilantro For garnish
  • to taste chili garlic sauce For drizzling
  • to taste sesame seeds For garnish
  • to taste lime wedges For serving

Instructions
 

Prepare the Broth

  • Heat the tablespoon of oil in a large pot until shimmering.
  • Add the sliced onion and sauté until soft and translucent.
  • Incorporate the grated ginger and pressed garlic, stirring until fragrant.
  • Stir in the chili garlic sauce, oyster sauce, and fish sauce.
  • Pour in the soy sauce and rice vinegar, mixing well.
  • Add the shiitake mushrooms and baby bok choy, followed by the chicken thighs.
  • Pour in the chicken broth and water, bringing to a gentle simmer.

Prepare the Noodles

  • Cook the fresh yakisoba noodles according to package instructions, then set aside.

Prepare the Ramen Egg

  • Gently boil the eggs for six to seven minutes.
  • Transfer them to an ice bath to cool.
  • Mix soy sauce, rice vinegar, and water in a bowl for the marinade.
  • Peel the cooled eggs and marinate them for at least thirty minutes.

Assemble and Serve

  • Ladle the soup into bowls and add cooked noodles.
  • Halve the marinated eggs and place one half in each bowl.
  • Garnish with green onion, cilantro, chili garlic sauce, sesame seeds, and lime wedges.

Notes

For the freshest taste, consider using seasonal vegetables or local ingredients. You can also adjust the spice level according to your preference.
