  • 4 ounces shiitake mushrooms, sliced For texture and flavor
  • 0.5-0.75 pound baby bok choy, quartered Add vibrant greens
  • 1 pound boneless skinless chicken thighs Main protein source
  • 4 cups low sodium chicken broth Base of the soup
  • 1 cup water To dilute broth to desired consistency

For the noodles and eggs

  • 1-2 packages fresh yakisoba noodles Can substitute with any ramen noodles

Garnishes

  • Sliced green onions For freshness
  • Cilantro Optional, for flavor
  • Chili garlic sauce To taste for extra heat
  • Sesame seeds For topping
  • Lime wedges For serving

Instructions
 

Preparation

  • Heat oil in a large pot over medium heat.
  • Add sliced onion and sauté until translucent.
  • Introduce grated ginger and crushed garlic, stirring until fragrant.
  • Stir in chili garlic sauce, oyster sauce, and fish sauce.
  • Pour in soy sauce and rice vinegar, and let broth begin bubbling.
  • Add sliced shiitake mushrooms and quartered bok choy.
  • Introduce chicken thighs and pour in chicken broth and water.
  • Bring to a simmer and cook, allowing flavors to meld.

Noodle Preparation

  • Cook yakisoba noodles according to package instructions.

Ramen Eggs Preparation

  • Boil eggs for 6-7 minutes, then transfer to an ice bath for peeling.

Serving

  • Divide cooked noodles among serving bowls.
  • Ladle broth and vegetables generously over the noodles.
  • Slice ramen eggs in half and place on top.
  • Garnish with green onions, cilantro, sesame seeds, and lime wedges.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days.
