Ingredients
  

For the coating

  • 1 cup pecan halves Use fresh for the best flavor.
  • 1 egg white 1 egg white Whipped until frothy.
  • 3 tablespoons granulated sugar Can substitute with coconut sugar or maple syrup.
  • 1/4 teaspoon ground cinnamon Can substitute with nutmeg or cayenne for a twist.
  • 1/4 teaspoon coarse kosher salt
  • 1 teaspoon pure vanilla extract

Preparation

  • Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper or a silicone mat.
  • In a medium bowl, mix together granulated sugar, ground cinnamon, and coarse kosher salt.
  • Whisk the egg white and vanilla extract together until frothy, about 3-4 minutes.
  • Fold the pecan halves into the frothy egg white mixture until coated.
  • Using a slotted spoon, transfer the pecans to the sugar mixture and toss until well coated.
  • Spread the coated pecans in a single layer on the prepared baking sheet.

Baking

  • Bake the pecans in the preheated oven, stirring and checking every 15 minutes, for about 45 minutes or until golden brown and fragrant.
  • Once done, allow the pecans to cool completely before storing.

Notes

Store at room temperature in an airtight container for up to 2 weeks. Refrigerate for up to 1 month, or freeze for up to 3 months. Refresh in a warm oven before serving.
