Ingredients
  

For the Casserole

  • 6 cups broccoli florets Fresh or a 15-ounce bag of frozen broccoli
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 can cream of mushroom soup
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 1/3 cups grated sharp cheddar cheese Divided
  • 1/2 cup crushed Ritz crackers
  • 2 tablespoons unsalted butter Melted

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine sour cream, mayonnaise, cream of mushroom soup, garlic powder, kosher salt, and ground black pepper. Mix until well blended.
  • Fold in the broccoli florets until coated in the creamy mixture.

Cracker Topping

  • In a food processor, pulse Ritz crackers with melted butter until crumbly.
  • If crushing manually, crush the crackers in a resealable bag.

Assembly and Baking

  • Spray a 2-quart baking dish with non-stick cooking spray.
  • Transfer the broccoli mixture into the dish, spreading it evenly.
  • Sprinkle the remaining cheddar cheese and cracker crumbs over the top.
  • Bake uncovered for 30-35 minutes until bubbly and golden brown.
  • Let it rest for 5 minutes before serving.

Notes

Store leftovers in the refrigerator for up to 4 days or freeze before baking for up to 3 months.
