  • 4-5 medium russet or Yukon Gold potatoes, thinly sliced Each slice about an eighth of an inch thick
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese, divided For topping
  • 1 can cream of mushroom soup (10.5 ounces)
  • 0.5 cup milk
  • 0.5 teaspoon garlic powder

Preparation

  • In a skillet over medium heat, cook the ground beef with chopped onion until the meat is browned, about 5 to 7 minutes.
  • Wash and thinly slice the potatoes.

Layering

  • In the slow cooker, layer half the potatoes, followed by half the beef and onion mixture, then some cheddar cheese.
  • Repeat the layers until all ingredients are used.

Sauce Preparation

  • In a bowl, whisk together the cream of mushroom soup, milk, garlic powder, salt, and pepper.
  • Pour the sauce over the layered ingredients in the crockpot.

Cooking

  • Cover and cook on low for 6 to 8 hours.
  • About 15 minutes before serving, add the remaining cheddar cheese on top and cover again.

Serving

  • Serve hot, garnished with fresh parsley or chopped chives.
