Main Ingredients

  • 1 lb Italian sausage Use mild or spicy according to preference.
  • 19 oz frozen cheese tortellini Feel free to use fresh tortellini; adjust cooking time.
  • 4 cups fresh spinach, chopped You can also use frozen spinach.
  • 28 oz canned diced tomatoes, undrained Adds flavor and moisture.
  • 8 oz cream cheese, cubed Creates a creamy sauce.
  • 4 cups chicken broth Can substitute with vegetable broth.
  • 1 tsp minced garlic
  • 1 tsp Italian seasoning
  • to taste salt and pepper

Instructions
 

Preparation

  • In a skillet over medium heat, cook the Italian sausage until golden-brown and fully cooked through. Drain excess fat and set aside.
  • In the crockpot, combine the browned sausage, diced tomatoes, minced garlic, Italian seasoning, and chicken broth. Stir until well mixed.
  • Scatter the cubed cream cheese over the mixture in the crockpot.

Cooking

  • Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours.
  • About 30 minutes before serving, add the frozen cheese tortellini and chopped spinach. Stir well, cover, and let cook until tortellini is tender.
  • Taste and adjust seasoning with salt and pepper before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. For longer storage, freeze in portions for up to 3 months. Reheat gently on the stove to retain creaminess.
