  • optional ham hock or smoked sausage For additional flavor.

Preparation

  • Rinse one pound of dried black-eyed peas under cold water.
  • In a crockpot, combine the black-eyed peas, vegetable broth, chopped onion, minced garlic, thyme, paprika, and salt and pepper.
  • If using, add the ham hock or smoked sausage to the center of the mixture.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours.
  • Occasionally stir the mixture, allowing the flavors to meld.
  • Check for tenderness; the black-eyed peas should be soft and creamy.

Serving

  • Let the peas cool slightly before serving.
  • Serve warm, optionally garnished with fresh herbs.

Notes

For a meatless option, omit the ham hock or sausage. Consider adding a splash of apple cider vinegar before serving for an extra flavor boost.
