Ingredients
  

Main Ingredients

  • 1 pound dried black-eyed peas
  • 1 pound smoked sausage, sliced
  • 1 can (10 oz) diced tomatoes and chilies
  • 3 cups beef broth
  • 4 cups water

Vegetables

  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 rib celery, diced
  • 4 cloves garlic, minced

Spices

  • 1 tablespoon Creole seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried thyme
  • salt and pepper to taste

Preparation

  • Slice the smoked sausage and place it in a skillet over medium-high heat. Cook until it turns golden brown and fragrant.
  • Transfer the sausage into the crock pot.
  • Dice the yellow onion, green bell pepper, and rib of celery.
  • Mince the garlic.

Cooking

  • Add the black-eyed peas, sausage, diced tomatoes and chilies, beef broth, and water to the pot.
  • Sprinkle in the Creole seasoning, garlic powder, onion powder, thyme, salt, and pepper.
  • Stir gently to mix all ingredients.
  • Turn the crock pot to high and cook for one hour.
  • After one hour, reduce the heat to low and cook for an additional seven hours.
  • Serve and enjoy the delightful aroma.

Notes

For a punch of heat, add diced jalapeƱos or a dash of hot sauce. Soaking black-eyed peas overnight can reduce cooking time. Taste and adjust seasoning as needed.
