  • 8 ounces spaghetti or fettuccine Cook to al dente.
  • 1 cup ripe tomatoes, diced Fresh tomatoes are recommended.
  • 1 cup heavy cream For a lighter option, consider substituting with Greek yogurt.
  • 4 cloves fresh garlic, minced Sauté until golden brown.
  • 2 tablespoons extra virgin olive oil For sautéing garlic.
  • 1/4 cup fresh basil, chopped For garnishing.
  • Salt and freshly cracked black pepper To taste.

Instructions
 

Cooking the Pasta

  • Fill a large pot with salted water and bring it to a rolling boil.
  • Add the spaghetti or fettuccine and cook until al dente, approximately 9 minutes.
  • Drain the pasta and set aside.

Making the Sauce

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté until golden brown.
  • Introduce the diced tomatoes, seasoning with salt and pepper. Let simmer for about 5 minutes.
  • Lower the heat and gradually stir in the heavy cream until combined.
  • Add the cooked pasta to the sauce and toss until evenly coated.

Serving

  • Serve the pasta garnished with fresh basil and, optionally, grated Parmesan.

Notes

Store leftovers in an airtight container in the fridge for up to four days. Can be frozen for up to three months. Reheat gently, adding a splash of cream if necessary.
