  • 8 ounces whole wheat pasta Cook according to package instructions.
  • 1 pound lean chicken breast, diced Cut into bite-sized pieces.

Sauce Ingredients

  • 1 cup Greek yogurt Adds creaminess.
  • 1/2 cup grated Parmesan cheese Enhances richness of the sauce.
  • 3 cloves garlic, minced Provides a garlicky punch.
  • 2 cups fresh spinach Add for nutrition and color (optional).
  • 1 tablespoon olive oil For sautéing the chicken.

Instructions
 

Preparation

  • Cook the whole wheat pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat until shimmering.
  • Add diced chicken breast, seasoning with salt and pepper, and cook until golden brown and cooked through.

Sauce Creation

  • Add minced garlic and sauté for about one minute until fragrant.
  • Lower heat and stir in Greek yogurt and grated Parmesan cheese until well combined.
  • If using, add spinach and stir until wilted.
  • Combine cooked pasta with the sauce, stirring to coat well and heat through for an additional minute.

Serving

  • Serve warm, garnished with additional Parmesan cheese and cracked pepper.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat with a splash of water or yogurt to restore creaminess.
