  • 4 cups chicken broth
  • 2 cups water
  • 3 packs ramen noodles discard seasoning packets
  • 1 cup heavy cream
  • 4 cloves minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with water mixed with 2 tablespoons of water
  • 1 teaspoon grated ginger
  • 1 teaspoon red pepper flakes optional
  • to taste salt and pepper
  • 2 pieces green onions sliced for garnish
  • to taste fresh cilantro for garnish, optional
  • as needed vegetables of choice e.g., fresh spinach or bok choy

Instructions
 

Cooking the Chicken

  • Heat one tablespoon of olive oil in a large pot over medium heat.
  • Season the chicken breasts with salt and pepper, then place them in the pot.
  • Cook each side for about 5 to 7 minutes until golden brown and cooked through.
  • Remove the chicken from the pot, let it rest, and then slice it into tender pieces.

Making the Broth

  • In the same pot, add minced garlic and grated ginger, sauté for 1 to 2 minutes until fragrant.
  • Pour in chicken broth and water, bringing to a simmer.
  • Add ramen noodles and cook according to package instructions for about 4 to 5 minutes.
  • Stir in heavy cream and soy sauce, allowing the flavors to combine.
  • Add red pepper flakes if desired, then mix cornstarch with water and add to the pot, stirring until thickened.
  • Incorporate your choice of vegetables, letting them wilt slightly.

Serving

  • Divide creamy ramen into bowls and top with sliced chicken.
  • Garnish with green onions and cilantro if desired.

Notes

This dish can be stored in an airtight container for 3 to 4 days in the fridge. For longer storage, freeze broth and noodles separately for up to three months. Consider adding lemon juice or miso paste for extra flavor.
