Ingredients
  

For the Chicken

  • 4 pieces chicken breasts
  • 2 tablespoons olive oil for cooking
  • Salt to taste salt for seasoning
  • Pepper to taste pepper for seasoning

For the Sauce

  • 1 cup fresh cranberries can use frozen if necessary
  • 0.5 cup orange juice freshly squeezed is best
  • 0.25 cup maple syrup
  • 2 tablespoons fresh rosemary, chopped for flavor enhancement

Instructions
 

Preparation

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a large oven-safe skillet, drizzle 2 tablespoons of olive oil over medium heat.
  • Season 4 chicken breasts with salt and pepper, and add them to the skillet. Cook until golden brown on both sides.

Make the Sauce

  • In a bowl, combine 1 cup of fresh cranberries, 0.5 cup of orange juice, and 0.25 cup of maple syrup. Stir gently.
  • Add 2 tablespoons of chopped rosemary to the bowl and mix well.

Cooking

  • Once chicken is browned, pour the cranberry mixture over it.
  • Transfer the skillet to the preheated oven and bake for 20 to 25 minutes, until the chicken is tender and cooked through.

Serving

  • Allow the chicken to rest briefly before serving. Garnish with an extra sprinkle of rosemary.

Notes

Cranberry Orange Chicken can be marinated for an hour prior to cooking for enhanced flavor. Leftovers can be stored in the refrigerator for 3 to 4 days or frozen for up to 3 months.
