Preparation

  • Heat olive oil in a large soup pot over medium heat until it shimmers.
  • Add chopped onion and sauté for about five minutes until soft and translucent.
  • Stir in minced garlic, chopped carrots, and chopped celery. Sauté for an additional five minutes.
  • Sprinkle in ground cumin and smoked paprika, stirring until fragrant.
  • Incorporate rinsed lentils and stir briefly to coat them in the mixture.

Cooking

  • Pour in vegetable broth and bring to a gentle simmer.
  • Cover the pot and cook for thirty minutes, or until lentils are tender.
  • Stir in chopped kale and let it wilt for about two minutes before removing from heat.

Serving

  • Serve hot with a squeeze of lemon juice for added brightness.

Notes

This soup can be thickened with additional broth if necessary. Adjust seasoning to taste.
