Ingredients
  

For the Casserole

  • 2 tablespoons olive oil Extra virgin for best flavor.
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 pieces skinless chicken thighs, about 1 pound Bone-in thighs for richer flavor can be used.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon pepper Adjust to taste.
  • 1 cup uncooked long-grain rice
  • 3 cups chicken broth High-quality broth recommended.
  • 1 cup frozen peas Can substitute with other vegetables.

Instructions
 

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • Heat olive oil in a large skillet over medium heat until it shimmers.
  • Add the chopped onion and minced garlic, sauté until onion is translucent.
  • Season chicken thighs with salt and pepper, then cook in the skillet until golden brown, about 5 minutes each side.
  • Remove the chicken from the skillet and set aside.
  • Add the uncooked rice to the skillet, toasting it slightly.
  • Pour in the chicken broth, let bubble and scrape any bits from the bottom.
  • Stir in frozen peas and mix well.
  • Nestle the chicken thighs back into the skillet on top of the rice mixture.
  • Cover the skillet and transfer it to the preheated oven.

Baking

  • Bake for about 50 minutes or until chicken is tender and rice is fluffy.

Serving

  • Allow casserole to cool slightly before serving.
  • Consider serving with a fresh side salad or warm bread.

Notes

For extra creaminess, fold in softened cream cheese before baking. Can use leftover chicken to save time.
