  • 8 oz linguine Cooked in salted water
  • 2 pieces chicken breasts Diced into bite-sized pieces
  • 0.5 cup cowboy butter
  • 0.5 cup cherry tomatoes Halved
  • 0.25 cup chopped parsley

Seasoning and Extras

  • to taste pepper
  • for serving parmesan cheese Freshly grated

Preparation

  • Cook the linguine in a large pot of salted water until tender, then drain and set aside.

Cooking

  • In a large skillet over medium heat, melt the cowboy butter.
  • Add the diced chicken to the skillet and cook until golden and fully cooked through.
  • Stir in the halved cherry tomatoes and cook for another two minutes.
  • Add the cooked linguine and chopped parsley into the skillet, tossing until everything is coated in the butter sauce.
  • Season with salt and pepper to taste, and top with freshly grated parmesan before serving.

Notes

For extra flavor, sear chicken in batches. Can substitute chicken with seasonal vegetables or shrimp for variations.
