  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs Use gluten-free if desired.
  • 2 tablespoons Italian seasoning
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • 2 pieces eggs Beaten until light and frothy.
  • 2 tablespoons olive oil For searing the chicken.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine grated Parmesan cheese, breadcrumbs, Italian seasoning, garlic powder, salt, and pepper.
  • In a separate bowl, beat the eggs until they are light and frothy.
  • Dip each chicken breast into the egg mixture, then coat them with the breadcrumb mixture.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Sear each chicken breast for about 3-4 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish and bake for about 20 minutes or until fully cooked.

Serving

  • Serve warm, paired with sautéed vegetables or a side salad.

Notes

For better results, slightly pound the chicken breasts before cooking for even tenderness. Store leftovers in an airtight container, refrigerating for up to 3-4 days.
