Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, combine the sugar and egg, whisking until creamy for about 2-3 minutes.
  • Gently fold in the Cool Whip.
  • Gradually add in the flour, folding it in until well combined.
  • Using a spoon or cookie scoop, drop heaping tablespoons of dough onto a parchment-lined baking sheet.

Baking

  • Bake for about 10 minutes, or until the edges turn light golden brown.
  • Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Allow cookies to cool fully for about 10-15 minutes before serving.

Notes

If dough is too soft, chill in the refrigerator for 30 minutes before baking. Experiment with different flavorings and mix-ins.
