Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together flour, cocoa powder, baking soda, and salt until well combined.
  • In another bowl, beat the softened butter and granulated sugar until creamy and fluffy.
  • Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
  • Gradually incorporate the dry ingredients into the wet mixture until a soft dough forms.

Shaping and Baking

  • Dust a clean surface with flour and roll out the dough to about a quarter inch thick.
  • Use cookie cutters to shape the cookies and place them on a baking sheet lined with parchment paper.
  • Bake for 8 to 10 minutes until the edges are deep brown and the center remains soft.
  • Allow the cookies to cool completely on a wire rack before decorating.

Notes
