Ingredients
  

For the ganache

  • 8 oz dark chocolate, finely chopped Use high-quality chocolate for best results.
  • 0.5 cup heavy cream Heat until just simmering.
  • 2 tbsp raspberry liqueur Optional, adds depth to flavor.
  • 0.125 tsp salt Enhances chocolate flavor.

For the raspberry puree

  • 0.5 cup fresh raspberries Puree until smooth; strain if desired.

For coating

  • 1 cup cocoa powder or finely chopped nuts Choose one for rolling truffles.

Preparation of Ganache

  • In a saucepan, heat the heavy cream over medium heat until just simmering.
  • Remove from heat and add the chopped chocolate. Let it sit for a minute, then stir until smooth.

Raspberry Puree

  • In a blender, puree the fresh raspberries until smooth.
  • Strain to remove seeds if desired.
  • Mix the raspberry puree and raspberry liqueur into the chocolate ganache.

Chilling and Rolling

  • Chill the mixture in the refrigerator for two to three hours until firm.
  • Once firm, scoop the ganache and roll it into balls.
  • Roll the truffles in cocoa powder or chopped nuts to coat.

Serving

  • Store in the refrigerator until ready to serve.
  • Enjoy the delightful truffles with loved ones.

Notes

For a vegan version, substitute heavy cream with full-fat coconut cream and use dairy-free chocolate. Chill longer if ganache is too soft to roll.
