  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 0.5 cup unsalted butter, melted
  • 0.75 cup packed brown sugar
  • 0.25 cup granulated sugar
  • 1 large egg or 1/4 cup of applesauce for a plant-based version
  • 1.5 teaspoon vanilla extract
  • 1.5 cups finely shredded zucchini, squeezed dry

Mix-Ins

  • 1 cup semi-sweet chocolate chips
  • optional: chopped walnuts or pecans for added texture

Preparation

  • Preheat your oven to 350°F (175°C) and grease or line a 9x13 inch baking pan.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In a large bowl, combine melted butter, brown sugar, and granulated sugar, stirring until smooth.
  • Add the egg (or applesauce) and vanilla extract, mixing until blended.
  • Gently fold in the shredded zucchini.
  • Pour the dry mixture into the wet ingredients and stir until just combined; do not overmix.
  • Fold in the chocolate chips and any optional nuts.
  • Spread the batter evenly in the prepared pan.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out mostly clean.
  • Allow the bars to cool in the pan, then refrigerate for cleaner cuts.
  • Slice into squares and serve.

Notes

Freshly grated zucchini not only enhances flavor but provides moisture. Optionally sprinkle sea salt on top before baking for an enhanced sweetness.
