Ingredients
  

Salad Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 piece ripe avocado, pitted and diced Choose ripe avocados for a creamy texture.
  • 4 ounces feta cheese, crumbled Can be substituted with goat cheese for a different flavor.
  • 1/2 cup red onion, finely sliced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped

Dressing Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice, squeezed Prevents avocado from browning.
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • to taste salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine chickpeas, diced avocado, crumbled feta, sliced red onion, chopped parsley, and mint.

Make the Dressing

  • In a small bowl or jar, whisk together olive oil, lemon juice, minced garlic, and dried oregano.
  • Season with salt and pepper to taste.

Combine and Serve

  • Pour dressing over salad ingredients and gently toss until well coated.
  • Let it rest for a few minutes to allow flavors to meld before serving.

Notes

For a dairy-free variation, omit feta and use a dairy-free cheese alternative. For added spice, incorporate chili flakes.
