Preparation

  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add diced onion and let it soften until translucent, about 3-5 minutes.
  • Stir in diced carrots and celery, cooking until softened, about 5-7 minutes.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Pour in chicken broth and bring to a simmer.

Cooking

  • Stir in shredded chicken and tortellini. Season with dried herbs, salt, and pepper.
  • Cook according to tortellini package instructions until tender.
  • In the last minute, add fresh spinach and let it wilt.

Serving

  • Serve warm, topped with freshly grated Parmesan cheese.
  • Enjoy with rustic bread or a light salad.

Notes
